April...If you love coconut, there's nothing better than a homemade coconut macaroon. This is a simple version with only 3 ingredients. See the note below for a Spring and Easter variation.
5 1/3 cups flaked coconut
1 - 14oz can sweetened, condensed milk
2 tsp. vanilla
Combine all ingredients and mix well. Drop batter 2" apart onto greased cookie sheet. Bake at 350 degrees for 10-12 minutes or until lightly browned. With a spatula dipped in water, IMMEDIATELY remove to wire racks to cool. Makes 4 dozen cookies.
Notes...Add green food coloring to the batter. After dropping on cookie sheet, make an indentation in each one to form a "bird nest". After baking and cooling, add tiny jellybeans for an Easter treat.
