Cream Cheese Cookies

Busy summer days and nights...but still needing a quick recipe for a simple cookie with easy ingredients in your kitchen or pantry?  I have another good choice.  Vary the flavor of cake mix...but it's still a fast and easy snack for busy lifestyles or impromptu gatherings.  Enjoy!!

Cream Cheese Cookies

1/4 cup butter
8 oz. cream cheese
1 egg
1/4 tsp vanilla
1 cake mix (white, yellow, chocolate, strawberry....whatever you have on hand)

Cream the butter and cream cheese.  Blend in the egg and vanilla.  Add the cake mix (dry mix!) a third at a time.  Mix well.  Cover and chill 30 minutes.  Preheat oven to 375 degrees.  Drop by scant teaspoons onto ungreased cookie sheet.  Bake 8-10 minutes or until light brown.  Cool slightly before removing from cookie sheet to cooling rack.  Makes 6 dozen, depending on size desired.

Notes...can be rolled in granulated or colored sugar before baking.  Can also be frosted with buttercream icing after baking.  These are melt in the mouth treats.  Try different flavors of cake mixes to find your family's favorite.  ENJOY!
