Cover a 15" X 10" X 1" cookie sheet or jellyroll pan with aluminum foil. Break 12 whole graham crackers into fourths and place on foil. Pan should be covered with crackers. Breaking then ahead of time makes for easy cutting after baking. In 1 1/2 qt. saucepan, melt 1 cup of butter and 1 cup firmly packed brown sugar, stirring occasionally. Bring to a rolling boil and boil 2 minutes. Remove from the heat and stir in 1 1/2 cups of chopped walnuts. Pour mixture slowly over the crackers and spread evenly, covering all the crackers. Bake 10 minutes or until top is bubbling. Allow to cool 15 minutes. Separate into the cracker quarters and finish cooling on wire racks.

Additional tips...do not try to bake without the foil...it is a must. The boiling syrup baked turns into a rock hard, difficult clean up otherwise. You may also sprinkle the cookies with 1 cup of semi sweet chocolate chips when you remove them from the oven. After a few minutes, spread with a spatula and you have Toffee Crunch...another great treat. Makes 48 bars.
