Butterscotch Gingerbread Cutouts
1 c. butter
2 - 3.5oz butterscotch pudding and pie filling (not instant)
1 c. brown sugar, packed
3 t. ginger
2 eggs
1 t. baking powder
3 c. flour
1 t. cinnamon
Mix butter and sugar. Add eggs and mix well. Add pudding mix and then dry ingredients to form a soft dough. Cover and refrigerate one hour or until easy to handle. Divide dough into 4 portions, rolling one at a time on floured surface. For a thick, chewy cookie, roll to 1/4" or 1/8" for a crisp cookie. Bake on ungreased cookie sheet 8 minutes at 350 degrees. Cool on wire rack. Will yield 3-5 dozen depending on thickness.
To decorate, use a buttercream or decorator frosting to pipe snowflake designs. Sprinkle immediately with white, edible glitter and/or chunky sugar crystals. Vary your designs...use your imagination to make them a variety of styles for a nice assortment on a cookie plate. Check out the photo for some piping ideas. These cute and tasty treats can also be sprinkled with the sugar before baking or after baking, frosted and sprinkled for a nice effect.
Additional helps....these cookies will freeze well for making in advance. They can be defrosted in minutes and decorated as needed. This dough also freezes well. Allow to defrost before rolling and cutting. Make sure to use Butterscotch Pudding and Pie Filling (the cook kind), as instant pudding mix will not work. This is also a good recipe for Gingerbread Men!
